Raj Vaidya opens rare Burgundy at La Paulee

About Me

I was born in New Jersey, but grew up between my family’s native Bombay and Singapore. My love of food and wine comes directly from my family, who were obsessed with the rituals of cooking, dining, and sharing drinks around the table. That passion eventually became my career.

Along the way, I’ve had the privilege of working with some of the world’s great restaurants: Cru and Per Se in New York, Gary Danko in San Francisco, Seeger’s in Atlanta, and most notably, Daniel Boulud’s flagship restaurant, where I led the wine program from 2009 to 2020. From 2016 to 2020, I also served as Chef Daniel’s International Wine Director, helping to shape wine service across the Dinex Group.

My journey has also taken me into the vineyards themselves — working harvest at Robert Sinskey Vineyards in Napa, and completing internships in Burgundy at Domaine Jacques-Frédéric Mugnier, Simon Bize, and Domaine Roulot. Those experiences deepened my love of Burgundy, Champagne, and the classic wines of Europe, a passion that started much earlier in my career at The Ryland Inn in New Jersey.

After my time at Dinex, I joined Daniel Johnnes and his team as Director of Operations, where I grew Pressoir (their consulting and direct sales arm) and helped run some of the wine world’s most celebrated events: La Paulée, La Fête du Champagne, La Tablée, and Convivio del Vino.

Today, through my own consulting practice, I advise hospitality companies, finance firms, and some of the country’s top private collectors. I help build and manage world-class cellars, curate collections, and create unforgettable experiences around wine.

I hold diplomas from the Sommelier Society of America (2004) and the Wine & Spirits Education Trust (Advanced Certificate, 2004; Diploma, 2009). I’m also a graduate of Rutgers University, where I studied political science and philosophy — disciplines that taught me how to think critically, but it’s wine that has always kept me inspired.
